I'm so sorry but I was cackling at your confusion. I don't blame you though because the writing for this season is all over the place and probably only manga readers can grasp everything 😭 However, try to remember the first season of this! It was explained that Nicholas was taken away from the orphanage (from that lady and the other kids) and experimented on by Eye of Michael, and that the "healing" serum he uses speeds up his metabolism and thus his aging. He is originally way younger than he looks like, probably is still a teenage boy or freshly adult at most mentally (that's also why the lady, miss Melanie, and the other kids didn't recognize him immediately), he just has a body of an adult and now one of that even older, that's why his hair went gray. In the original (manga) he actually dies after this battle from overdose. I prefer manga over this, but I'm happy to see him live at least this one time. He has already died twice (technically thrice if we count Nightow's baseball AU lol, so he deserves to finally live)
